Buckwheat Banana Pancakes

Yummy pancakes made with a few simple ingredients and topped with a multitude of deliciousness.

 

Ingredients:
(Makes enough pancakes for 2-4)

1 Large Banana
2 Tablespoons Ground Flax
250ml Almond Milk
200g Buckwheat Flour
Tsp White Vineger
Tsp Bi-Carb Soda
Coconut Oil
Pinch Salt

Method:

– In a blender place all the ingredients apart from the coconut oil and blend on high speed until smooth.

– Heat the coconut oil in a frying pan until it’s melted and then pour about a cup of the pancake batter into the centre of the pan.

-Cook until the edge of the pancake starts to lift from the pan (around 3mins) then flip to cook on the other side for a further 1-2 mins.

-Remove the pancake from the pan and place on a plate, cover the plate with kitchen foil to keep warm.

– Repeat the above steps with the rest of the batter until it is all used up.

-Stack your pancakes and throw on your favorite toppings! I used goji berries, maple syrup, blueberries, coconut and a generous dollop of coyo.
