BBQ Roasted Whole Cauliflower

 

Sweet and sticky with a spicy kick, this is a really tasty way to enjoy cauliflower is completely fat-free and minimal effort. Tasty with sweet potato fries and a side salad.

 

Ingredients:

1 medium cauliflower

2 medium red onions

300g passata

50g dates

50g sundried tomatoes

1 red chilli

1 clove garlic

1/2 lemon juice

1 tablespoon liquid smoke

tablespoon dried basil

4 tablespoon balsamic vinegar

-Soak the dates and sun-dried tomatoes in some hot water for 10 mins, drain thoroughly and put it your food processor.

– To the food processor, add the chilli, passata, basil, liquid smoke, balsamic, garlic and lemon juice and process until its is all combined.

-Remove the greens from your cauliflower and slice up the red onions before putting the cauliflower in a deep iron pan and arranging the onion around it.

– Cover the cauliflower and onions in the sauce and cover the pan. Put in a 200′ oven for 1 hour, then you need to remove the cover and allow it to cook for another 30 mins.

-Remove from the oven and serve allowing it to stand for 5 mins before slicing and serving.
